This is one of my favorite go-to weeknight dinners in the fall/winter months. It is quick, easy and full of flavor. The combination of the mushrooms, onions, chicken and buttery finish remind me of eating a fine French meal.
Chinese Medicine Nutrition Energetics
- Chicken is warm and sweet, nourishing qi and blood.
- Onions are warm, acrid and bitter, expelling cold and moving qi.
- Mushrooms are cool and sweet, nourishing blood and draining/transforming dampness.
Anytime we eat dense, nourishing foods like proteins (or fatty, dairy-rich meals), it should be balanced with foods that move the qi as well. Our protein rich, heavy meals are difficult for the stomach to digest. The onion and mushroom in this recipe help to balance the heaviness of the chicken and support the stomach in digestion.
